Real Desi Ghee or Vanaspati? How to Tell the Difference in Mithai

One of the most common questions we get is simple: is this made with real desi ghee, or is it cut with vanaspati (hydrogenated vegetable oil)? It's a fair question. Vanaspati is cheaper, and some sellers use it without saying so, because it's hard for a buyer to tell just by looking at a sealed box.

Why it matters

Desi ghee and vanaspati behave very differently once you know what to look for, in taste, texture, and how the sweet holds up over time. Vanaspati is made from hydrogenated vegetable oil, and hydrogenated fats can contain trans fats, so many people prefer to avoid it.

How to tell the difference

  • Smell. Real desi ghee has a warm, slightly nutty, unmistakable aroma. Vanaspati is close to odourless, or has a faint, flat, oily smell.
  • Texture at room temperature. Desi ghee sweets soften and can turn slightly oily-looking at room temperature in warm weather, this is normal. Vanaspati-based sweets tend to stay stiffer and more uniform, because vanaspati has a higher melting point.
  • Mouthfeel. Desi ghee melts and coats the mouth; vanaspati can feel slightly waxy or leave a coating on the roof of the mouth.
  • Colour. Desi ghee gives sweets a warmer, more golden tone. Vanaspati-based mithai often looks paler and more uniformly pale yellow or white.
  • Price. Genuine desi ghee is expensive, so a mithai priced far below the market rate for its size is a signal worth questioning.

A note on "pure ghee" claims

Any seller can write "pure ghee" on a label. The more reliable signals are the ones above: smell, texture in your own kitchen, and how the sweet behaves after a day or two at room temperature. If a halwa stays rock solid and odourless well past when ghee-based sweets normally soften, that's worth asking about.
